The custom registration fields is a great feature in the admin tool.

I'd like to see the ability to alter the existing fields with this function. For example, I would not need to add any additional small fields, or large fields, if I could edit the existing field titles.

I realize I can do this manually, but for ease of use and future upgrades I'd like to be able to do it in the admin tool.

Agreed - as a further point, I'm wondering if it no longer is called "Custom Registration Fields" as a link name. To your point - it is simple to just comment out existing fields, but I'm not sure if custom fields should be taken away altogether. This way, it gives admins the flexibilty to add and/or modify.
